The Challenge with Noni Fruit
Noni fruit has no shelf life. Picked a peak maturity the fruit begins to ripen quickly and soon naturally rots and ferments which destroys the potency. Did you know? An inherent part of creating noni juice is the fermentation process. When noni fruit is fermented, alcohol is created which destroys a great majority of the naturally occurring compounds found in the pulp of noni. The potency is even further degraded by tossing out the pulp with the solid compounds.
Dr. Brian Issell, who researched pure unfermented noni at University of Hawaii, said, "If fermentation is allowed, then a different chemical profile is almost certainly present. Also, liquid products that have grape or blueberry juice are chemically different." Plus, fermentation destroys all the digestive enzymes.

Antioxidants
Antioxidants can offer powerful protection against oxidative stress by protecting the body from the damaging effects of free radicals. Foods high on the ORAC scale effectively help to neutralize free radicals, slowing the damage caused by the oxidative process.
ORAC stands for oxygen radical absorbance capacity or the antioxidant level in foods.

Scopoletin
Scopoletin is a coumarin. This compound is a phytochemical, which means it’s a biologically active compound in a plant. Scopoletin is found in the roots of plants of the genus Scopolia, including chicory and stinging nettle, in the passion flower and it’s also found in the pulp of raw noni fruit. Powerful Pain Reliever
In many studies, scopoletin has made a name for itself as a potent pain reliever. One study published in Phytotherapy Research (24[1]:38-42) by researchers from the University Clinic in Hamburg, Germany, reported that noni fruit’s analgesic activity “reduced the pain sensitivity comparably to the central analgesic drug tramadol.” When extracts of noni fruit puree were applied, the “effect was comparable to hydrocortisone.”
Mood Enhancer
Scopoletin’s pain relieving power may be related to another known effect of the phytochemical: mood elevation. This compound binds with serotonin to keep levels elevated. Serotonin is a neurotransmitter that regulates mood, sleep, hunger, temperature, and more.

Anthraquinones
Noni also contains a wide variety of anthraquinones. Anthraquinones are a type of phenol produced by some plants. Many phenols, including a number of anthraquinones, have shown evidence of being beneficial for human health.
Some of the anthraquinones in noni fight enzymes that break down collagen in the body, which may slow down the aging process. Many anthraquinones also help regulate smooth digestion.
The anthraquinone most of interest to noni researchers is called damnacanthal, which likely helps protect plants from UV damage and parasites.
